Kiwi Ice Cream



4 (or 5) ripe kiwi, peeled
2/3 cup orange juice
2 eggs (unless you are all out of eggs like I was and just skip those completely)
1 1/2 cups sugar
2 cups whipping cream or half-and-half (I prefer the 1/2 & 1/2)
1/2 tsp vanilla extract
6 to 8 drops green food coloring

Blend kiwis and orange juice until almost smooth and set aside. In a large bowl beat eggs and sugar until smooth and thick. Stir in the kiwi/OJ mixture and remaining ingredients until evenly distributed. Pour into ice cream maker and freeze according to manufacturer's directions. Makes about 2 quarts.

You just might be tipping the scales towards getting an ice cream maker. This would be the third year in a row I've considered it. Maybe I should hit up the thrift shops NOW! :D Thanks for the recipe. I'm sure it's as wonderful tasting as it looks. BTW - you take some of the best pictures. Thanks for sharing your eye with the world.
